Have you ever heard of ramps? They're a little bit mysterious and not everyone has heard of them. You can only harvest them for a very short time in the spring. They're strongly scented but milder and sweeter in flavor than their onion or garlic counterparts. Not really garlic and not quite an onion or leek, they're beautiful roasted on their own or as a compliment to any dish that requires the addition of onions or garlic. They're especially delicious sautéed in butter.
